Ingredients
- 600 g mussels, cleaned and debearded
- 100 g rigatoni
- 1 can (400 g) brown and white beans, drained and rinsed
- 4-5 cloves garlic, thinly sliced
- 240 g crushed tomatoes
- 1 carrot, diced
- 2 celery stalks, diced
- 120 ml white wine
- 1 liter vegetable or fish stock
- 60 ml olive oil
- Fresh parsley, chopped, for garnish
- Red pepper flakes (optional, for heat)
- Salt and pepper, to taste
