- 2 large potatoes, peeled and diced
- 2 cups kale, stems removed and finely chopped
- 1/4 cup basil pesto (store-bought or homemade)
- 1/4 cup grated Parmesan cheese (optional)
- 1/4 cup extra virgin olive oil
- Salt and black pepper, to taste
- Optional toppings: crispy bacon, toasted pine nuts, or extra Parmesan cheese
