- 1 shallot, very finely chopped
- 1 garlic clove, finely chopped
- 1 egg yolk
- Salt
- Black pepper
- 2 tablespoons olive oil
Ingredients for the Sauce:
- 3 tablespoons olive oil
- 2 garlic cloves, sliced
- 400 g tomato sauce with basil
- 100 ml broth
- 3 tablespoons concentrated tomato paste
- 1 tablespoon balsamic vinegar
Extras for Finishing:
- Salt
- Black pepper
- 1 small red chili, finely chopped
- 3 handfuls of fresh basil leaves
- 2 sprigs fresh oregano (leaves only)
- 300 g rigatoni
- 40 g Parmigiano Reggiano
- Extra olive oil
