"Just like Nonna used to make" – Uit Pauline’s Keuken

Every day, a full-fledged Italian family is hard at work making fresh pasta. And even if you’re not officially family, that’s exactly how you’ll be treated. The pasta is made just as they learned from their nonna—with fresh ingredients and, most importantly, a whole lot of love. While not everything can be done by hand (the sheer volume would make that impossible), the process remains true to how you would make it at home. Flour (sourced from Italy), eggs, and a little bit of water—that’s all it takes to create authentic pasta.

The dough is kneaded and then rolled out using a pasta sheeter before being shaped into pappardelle, tagliatelle, spaghetti, rigatoni, lasagna, and more. Fresh potato gnocchi is also made here daily, ensuring the same care and tradition go into every piece.

The name ‘fabriek’ (factory) doesn’t quite do it justice—it’s a kitchen where pasta is crafted daily with incredible love and dedication. De Pastafabriek offers specialties from the authentic Italian kitchen, prepared using original family recipes and organic ingredients. Flavorful, high-quality products are the foundation of every recipe.

De Pastafabriek traces its roots back to Ristorante d’Antica, located on Reguliersdwarsstraat in Amsterdam. The D’Antuono family is the driving force behind this Italian restaurant, which has always been dedicated to offering authentic Italian specialties, prepared according to original family recipes.

Word of d’Antica’s fresh pasta quickly spread, and requests from outside the restaurant started pouring in. To meet this growing demand, the decision was made to establish a dedicated pasta kitchen. While the name ‘fabriek’ (factory) might suggest mass production, the reality is quite the opposite—it’s a kitchen where, just like in Ristorante d’Antica, pasta is crafted daily with incredible love and dedication.
