The flour

Our commitment to quality is reflected in our choice of Triplozero® flour from Molino Dallagiovanna—a product of centuries-old milling expertise. This exceptional flour not only enhances the texture and flavor of our pasta but also embodies a thoughtful approach to production, where every grain is treated with care. The ultra-fine structure of Triplozero® flour brings out the natural color of our egg pasta and prevents discoloration, thanks to a unique grain-washing process that optimizes hydration and improves dough quality. This method also minimizes waste, staying true to the Italian tradition of crafting exceptional meals with the finest and most reliable ingredients.

The eggs

For our traditional pasta, we use free-range eggs from the Netherlands, sourced from hens that lead happy and healthy lives. These hens enjoy fresh air daily in lush, open spaces and spacious barns filled with natural light, comfortable perches, and cozy nesting areas.

Their diet is carefully balanced to ensure they receive the best care, resulting in eggs of exceptional quality. By choosing these eggs, we not only enhance the flavor and texture of our pasta but also reinforce our commitment to animal welfare.

The pasta

Unlike many large-scale producers, De Pastafabriek refuses to pasteurize its pasta. This choice preserves the integrity of our product, maintaining the authentic texture and flavor that pasteurization often diminishes. While pasteurization can extend shelf life, it also strips away the freshness and delicate qualities that make pasta truly special.
